Lemon Thyme Roasted Potatoes

Ingredients
  

  • Potatoes any kind you like, cut into bite-sized pieces
  • 1 lemon zest + juice
  • 1 1–2 tablespoons fresh chopped thyme
  • 2 2–3 cloves garlic chopped
  • Salt and pepper to taste
  • Olive oil A generous drizzle for tossing the potatoes in

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Prep the potatoes: Wash and cut your potatoes into evenly sized chunks so they cook evenly.
  • Toss with flavor: In a big bowl, combine the potatoes with a good drizzle of olive oil, the lemon zest and juice, chopped garlic, thyme, salt, and pepper. Toss everything until the potatoes are well coated.
  • Spread them out: Pour the potatoes onto a baking sheet in a single layer—make sure they’re not too crowded so they get crispy.
  • Roast for about 30–45 minutes, flipping them halfway through, until they’re golden brown and tender on the inside.
  • Taste and finish: Once they're done, give them a taste and add an extra squeeze of lemon juice, a sprinkle of more thyme for added brightness or a pinch of salt.
  • Serve warm and enjoy with basically anything—because they go with everything.
