Preheat the oven to 425°F (220°C).
Prep the potatoes: Wash and cut your potatoes into evenly sized chunks so they cook evenly.
Toss with flavor: In a big bowl, combine the potatoes with a good drizzle of olive oil, the lemon zest and juice, chopped garlic, thyme, salt, and pepper. Toss everything until the potatoes are well coated.
Spread them out: Pour the potatoes onto a baking sheet in a single layer—make sure they’re not too crowded so they get crispy.
Roast for about 30–45 minutes, flipping them halfway through, until they’re golden brown and tender on the inside.
Taste and finish: Once they're done, give them a taste and add an extra squeeze of lemon juice, a sprinkle of more thyme for added brightness or a pinch of salt.
Serve warm and enjoy with basically anything—because they go with everything.
