Potatoes are the best part of any meal. I love potatoes in all their forms, and I’m particularly fond of roasted potatoes because all you have to do to make them work with literally any meal is adjust the spices you use.
In this case, we chose lemon and thyme because it felt like the perfect accompaniment to a spring-themed meal. These potatoes are tender, flavorful, and so easy to prepare!

Lemon Thyme Roasted Potatoes
Ingredients
- Potatoes any kind you like, cut into bite-sized pieces
- 1 lemon zest + juice
- 1 1–2 tablespoons fresh chopped thyme
- 2 2–3 cloves garlic chopped
- Salt and pepper to taste
- Olive oil A generous drizzle for tossing the potatoes in
Instructions
- Preheat the oven to 425°F (220°C).
- Prep the potatoes: Wash and cut your potatoes into evenly sized chunks so they cook evenly.
- Toss with flavor: In a big bowl, combine the potatoes with a good drizzle of olive oil, the lemon zest and juice, chopped garlic, thyme, salt, and pepper. Toss everything until the potatoes are well coated.
- Spread them out: Pour the potatoes onto a baking sheet in a single layer—make sure they’re not too crowded so they get crispy.
- Roast for about 30–45 minutes, flipping them halfway through, until they’re golden brown and tender on the inside.
- Taste and finish: Once they're done, give them a taste and add an extra squeeze of lemon juice, a sprinkle of more thyme for added brightness or a pinch of salt.
- Serve warm and enjoy with basically anything—because they go with everything.
